      Homemade mushroom poutine with oven baked fries


      Having a mushroom poutine recipe on our website is a must. This dish is super popular for a reason and at Les 400 Pieds de Champignon we are big fans too!

      Ingredients for 2 portions:


      To prepare the oven baked fries, first, wash then slice the potatoes. 

      After that, soak them in cold water for over 30 minutes and let them dry. You can use two kitchen towels for this.

      Preheat the oven to 380 F.

      Put the potatoes in a bowl and add the vegetable oil, salt, paprika and provence spice mix.

      Place your potatoes on a baking sheet, spread them evenly as much as you can.

      Bake it in the oven for about 20 minutes.

      Increase the heat to 425 F and bake it until they become crisp, which takes about another 20-30 minutes depending on the size of your potato slices.


      While you’re waiting for the potatoes to bake, start preparing the gravy:
      1) Add the sauce mix to 250 ml cold water and mix it well.
      2) Let it rest for 15 minutes while the mushrooms start to rehydrate.
      3) Add this mixture to 850 ml boiling water, bring to boil while stirring it constantly.
      4) Simmer it for 3 minutes then it's ready to be served!


      Serve the hot fried potatoes, top it with a ladle of mushroom gravy, add the fresh cheese curd, then repeat this one more time and finish it up with more gravy! 

      I prefer to add a little bit more cheese on the top too, just because it is sooo good!

      You will most likely have some gravy left that you can use as a topping on a pie, any sort of meat or baked vegetables too.
